cherry time

we were in kent earlier this week and bought a kilo of cherries from a stall in the small village where we were staying – apparently they’d been picked the day before, from trees a few miles down the road. the fruit was delicious – sweet with plenty of flavour. in previous years i would have eaten them all, just as nature intended, but having discovered preserved cherries in syrup last summer, i knew what i wanted to make with these first cherries of the season. this is a wonderful thing to have in your fridge when the weather is hot – i loved serving it to friends last summer and look forward to doing the same this year.
the fruit are now sitting in the fridge, chilling and becoming ready to eat; the stones are submerged under vodka, slowing turning into homemade kirsch. i can’t wait to enjoy both.
