discovering new toppings!
pizza is something that i could happily eat every week. i love making it at the weekend, when i know david and i can have a slow and lazy evening to pull it together.
but writing about it every week isn’t so easy. i’ve already given you my pizza dough recipe, which i still love and use every time. and there isn’t much else to say.
actually, i could fill you in on my tomato sauce which is very simple – slice a couple of cloves of garlic and gently fry them in a little oil. add a tin of chopped tomatoes, a little sugar and some sprigs of fresh basil and let it bubble away until your sauce is thick. remove the basil and season to taste.
toppings is the obvious next thing to talk about. we always share a couple of pizzas – usually a veggie one (artichokes plus griddled aubergines or courgettes are my favourite topping, usually with goats cheese instead of mozzarella) and then follow it with a spicy meaty one (salamis or chorizo with jalapenos or peppadew peppers).
however, last night’s pizza topping was a little different (for us, i know it’s not that radical!) and quite delicious. we used blanched asparagus, italian marinated mushrooms and parma ham plus mozzarella on top. you should try it.
